    Does anyone know what pastry frames Chef Richard Bies is using for the Donut class? He’s using them to roll dough to a specific thickness, but I can’t find anything that looks even remotely similar. I’ve looked all over trying to find them and I only seem to find full rectangular frames that are too thick.

    You can look for them as thickness guides by the brand PME.
