          The dish is represented the summer season.

          can call summer lobster.I prepared with cucumber salad with water cress and compote sauce with lobster oil .You can get Fresh acidity and sea smell .I try to use all of part from lobster .

              Hello hello!

              Since it’s a gorgeous lobster i would’ve loved to see some legs or the claw. You can take some inspiration looking for platings that have half lobster on display, that way you can show how well it’s cooked.

              Try making a composition less structured. I can see 2 circles and 2 strips clearly. Play with each food’s shape. Maybe you can plate the lobster in the center as a protagonist.

              For the sauce, you can choose between plating it under the lobster or next to it. And it doesn’t have to be a round circle, you can try C-shape, and later drizzle the lobster oil. If you have a siphon, it helps a lot for gaining texture.
