I’ve spent several days reflecting on this challenge. I admired the incredible dishes and definitely wanted to participate, but I faced serious challenges finding the ingredients. Some recipes were fantastic, but I would have had to modify them too much.
In the end, I decided to make the smoked salmon lingots with fresh queso… but the algae layers were unavailable. (Guys, I live in Hungary! No sea, no fish, no algae 🤣)
So, as you know me, I slightly adapted the recipe.
I made small choux pastry balls and prepared a delicious cheese spread (a mix of cream, vegan cheese, egg yolk, and butter). I filled the choux with the cheese cream and garnished them with smoked salmon, black salt, cayenne pepper, cherry tomatoes, yellow beetroot spirals, and onion rings marinated in lemon juice.
I also made a bit of lemon-infused salmon tartare and seasoned it with sage and thyme.
My family absolutely loved it! This is my contribution to our common Christmas menu, celebrating together with my Scoolinary peers. 👨🍳😍
