Here is my Ă©clair collection!
I spent the whole day making them, and you know what? I enjoyed every moment. I followed Fran’s recipe for the choux pastry but let my creativity run wild with the flavors, shapes, and decorations.
For the fillings, I made lemon cream, vanilla cream, Parisian cacao cream, and whipped cream. For the decorations, I used chocolate, cream, fresh fruits, and lime zest. You can see the results in the pictures!
It was a joy to make them and even more rewarding to see my family eagerly curious to taste the different varieties.
Thank you for this amazing challenge!P.S. Scoolinary should consider partnering with an online Zumba platform—if you keep launching challenges this frequently, we’ll need to balance it out with more exercise!

The variety of flavors and fillings you created is impressive, and I can almost taste the balance between the richness of the creams and the freshness of the fruit and zest. 🍋🍫 How did you find the balance between the different decorations? Were there any flavors that turned out to be a surprising favorite for you or your family? I’m sure the challenge was a fun adventure – and I’m with you on the Zumba idea, it would be a total BLAST to share it with you guys!1-

@Sol Damiani I loved the one with lemon cream filling and fondant with coco and lime zest. It was similar to the one suggested by the course…. 👨🍳🍋
