Pašticada with gnocchi is a dish that embodies the richness of flavors and the art of slow cooking, bringing a delicate harmony of sweetness, acidity, and deep meaty aromas to the plate. This Mediterranean culinary gem begins with marinating beef in a mixture of wine, vinegar, and spices, enhancing its texture and complexity of taste. After marinating, the meat is carefully larded with bacon and aromatic spices, then slowly braised with onions, carrots, and celery while gradually adding dried plums, prošek (Dalmatian dessert wine), and seasonings that create the dish’s characteristic sweet-sour profile.
Through slow simmering over low heat, the meat becomes exceptionally tender, while the sauce transforms into a velvety, rich essence infused with the scents of the Mediterranean. The key to balancing sweetness and acidity in the reduction was gradually adding ingredients and continuously tasting throughout the cooking process. ProÅ¡ek and dried plums provide deep, natural sweetness, while red wine and vinegar add the necessary acidity. Slow simmering rounds out the tart notes while enhancing the sweetness, and a touch of veal or beef broth helps maintain balance. Finally, a pinch of salt and freshly ground pepper brings all the flavors together. 👩🏼🍳
