When time isn’t on my side, but my craving for something perfect is, I make my favorite pasta – Aglio e Olio, a simple yet powerful combination of flavors that never lets me down.
The fusilli swirl in the pot like tiny whirlpools, absorbing the very essence of Italian culinary philosophy – minimal ingredients, maximum pleasure. While the pasta cooks, garlic transforms into golden perfection in olive oil, releasing its irresistible aroma. Crushed red pepper joins in, adding a subtle yet decisive kick, while parsley brings a refreshing touch to every bite. The starchy pasta water binds everything into a silky emulsion that wraps around the fusilli like a luxurious cloak. Finally, Parmesan, as the crowning glory, adds the last layer of decadence.

@Sol Damiani I usually choose the pasta according to my own taste, depending on the dish I am serving it with. I know that Aglio e Olio is usually served with spaghetti, but for me the fussilli somehow bring out the flavor of the emulsion better. ☺️
