This Sacher Light is so intriguing!
Reducing sugar and fat without losing flavor sounds like a well-thought-out challenge, and we appreciate you sharing your creation inspired by Chef Miguel Guarro’s techniques.
It’s a privilege to apply modern techniques to classics like this. The glossy finish is a great choice,it highlights the pecan and gives it a polished look.
Thanks for sharing it with the community! 🙌🏻

That Sacher Light looks absolutely stunning! 🍫 The balance between reduced sugar & fat while keeping (or even enhancing) the flavor is no easy feat—bravo! I’d love to know, how did you adjust the texture to maintain that iconic moist and velvety bite? Your technique is on point! 🔥

@soldamiani A large part of milk chocolate is sugar, so it is sweet enough. Chocolate also contains enough fat. The key to a lighter texture is to understand the composition of the raw materials used. To make the product less sweet – but at the same time solid – you can use fibers. These also have a positive effect on your health.

@moregnuss-info It makes perfect sense—leveraging the natural sweetness and fat content of chocolate while fine-tuning the balance with fibers. Did you find that certain types of fibers work better than others in maintaining that classic Sacher texture? I imagine some might impact the mouthfeel differently!
