I don’t like too crispy a cookie but I love the flavour of a spicy ginger snap, so I’ve been experimenting with the ginger spiced molasses cookie but made in the style of a chewy chocolate chip-style. Same taste profile, different texture!

What an interesting experiment! Achieving a soft and chewy texture in a spiced molasses cookie must have required precise adjustments to the ingredients and baking time.
The deep golden color and even crumb say a lot about how well-balanced the recipe turned out. Did you make any changes to the fat or moisture content to get that texture?

Hi Sussan, Thanks, I was happy in the end, though it took a few tries! My ratio of butter and sugars is higher, I believe, than a traditional ginger snap, also the final recipe has more light brown sugar than white and also more molasses. I scoop mine on the smaller side, freeze them and bake from frozen, about 16 minutes at a higher heat. I also didn’t roll these in sugar to keep the ‘crust’ softer. It is fun experimenting.
