Matcha & Pompia Cookies
Ingredients: butter, eggs, sugar, demerara sugar, salt, milk, flour, matcha, baking, asphodel honey (a typical honey made in Sardinia and other areas of the Mediterranean), white chocolate, and filled with apple and pompia jam (pompia is an endemic citrus fruit from Sardinia).
This cookie is dedicated to two of my passions: Japan and my home, Sardinia.

Matcha, asphodel honey, pompia… this cookie looks like it has an international passport! 😅
I love how you managed to bring Japan and Sardinia together in a single bite. Plus, the texture looks amazing, and that apple and pompia marmalade filling must add a juicy, flavorful touch.
