Excited to share the result of these fantastic soft almond crinkle cookies, or as they called in Italy Amaretti Morbidi . Crinkled on top, with soft and juicy interior… mmm delicious

I love how the crinkled surface hints at what’s inside—pure softness. Amaretti morbidi are the kind of cookies that seem simple at first but then surprise you with their texture and that little almond kick that lingers on your palate. I bet they’re perfect with a coffee or a sweet wine. Careful though—leave them out in the open, and they’ll vanish in seconds! 😅

@Sol Damiani 🙏❤️ I used half of the flour made from the blanched almonds, dry and aged, and half with the flour that I make myself, by grinding roasted unpeeled almonds and then sifting them until fine flour is obtained. It definitely enhances the flavour of the amaretti. And yes, I also add the extract of bitter almonds for an extra almondy kick:)
