      Today, I was feeling extremely creative, thanks to the fresh ricotta we bought at the market. It was quite a large portion, and I wanted to use it all.

      I made ricotta pogácsa, a Hungarian linzer-based savory cookie—definitely a strong contender for the #cookiechallenge!

      I also made ricotta ravioli, but I forgot to take pictures—can you believe it? Luckily, I conserved some portions of this fresh pasta in the freezer, so next time, I’ll make sure to snap some photos!

        Between the pogácsa, the ravioli, and probably a few extra bites, that ricotta really put in some overtime. These little biscuits look like they have a texture somewhere between flaky and fluffy, right? They seem perfect for pairing with a good coffee or even as a snack with something creamy on top. How did they turn out flavor-wise? Did you add any extra touch like herbs or cheese?
