Ocean Kiss with Dill Cream

Story about „Kiss with Dill Cream“:
This dish was born from memory. Not of lavish feasts, but of simple, quiet moments by the sea. In the north, where the water is cold and the sky is often painted with colors you can’t quite describe, salmon is more than an ingredient – it’s a part of identity, a symbol of raw nature and the gentleness it offers when approached with respect.
That’s why I chose to present „Kiss with Dill Cream“ – small, carefully shaped bites of salmon, standing proudly on sticks like pine trees on the windy cliffs of a fjord. These bites are wrapped in a delicate yet piquant dill cream, because I wanted to strike a balance between the familiar and the unexpected. Just like the northern waters were cold, but my heart felt warm.
The hardest part was finding that balance – to keep the salmon tender, while allowing the sauce to be bold enough to support it without overpowering it.
The best part? The scent of fresh dill while chopping, and the moment the first bite shone on the plate – like a tiny northern light. That contrast of colors, textures, and flavors… that’s when I knew this dish was telling my story.

@Sussan Estela Olaya Thank you dear for the kind words. Let me tell you a little secret, this is just the first dish I prepared. I have many more gastronomic stories in the art edition. Salmon is one of my favorite sea fish, so I didn’t bother much about the baking technique. More marine editions coming soon ☺️

When it comes to the dressing, the key was balance: I used lightly sweetened lemon juice (just a drop of honey) to soften the acidity and tie it nicely with the creaminess of the mayo. Red onion added a bit of sharpness, and the fresh dill brought everything together into that “love letter” to the sea.
The sesame and salmon needed the sauce to support rather than overpower them, so I aimed for a gentle yet expressive note.
This is just the first appetizer—many more stories are coming for this challenge. With this post, I’ve opened the door to a new adventure.
