      I tried Chef Mario Sandoval’s recipe for pork with Romaine lettuce emulsion this evening (from the Spanish Haute Cuisine course). I had a fabulous time, creating something new in my kitchen. The recipe calls for a suckling pig, but I substituted roast pork belly, as that’s what I had available.

      I was mainly interested in the lettuce emulsion. I enjoy creating sauces, but I’ve never made anything quite like this before. It was incredibly easy to do. After juicing the Romaine lettuce, I added the ingredients to a blender and processed until smooth, thick and glossy. The resulting emulsion has the texture of mayonnaise. I quartered the recipe and it made enough emulsion for 4 portions. 

      As for the taste, that was very interesting. I was so curious about it, but after making and tasting it, I realised that it tasted like a lettuce salad with vinaigrette! Considering the ingredients used, this made sense. Lettuce, vinegar, oil, mustard and seasoning. This is a salad, with the texture of mayonnaise!

      It is quite a bitter emulsion, which the chef mentions. I suppose one could play around with the oil, vinegar, sugar and salt ratios, to tweak the flavour and reduce the bitterness, or use a sweeter type of lettuce. It pairs well with the richness of the pork, though. 

      I greatly enjoyed making this and using Ultratex for the first time. It’s a modified tapioca starch, used as a thickener. I used my special scale with 0.1g accuracy, to measure out the Ultratex and xanthan gum, as I wanted to get the texture just right. 

      Now I wonder if the same result can be achieved, using different vegetable juices? I don’t see why not. Very glad I tried this recipe, I learnt something new.

        Wow, @mandie-lowe 😍, thanks for sharing. I had no idea about the existence of this sauce, and I’d love to try it. It never occurred to me to make mayonnaise with a ‘salad taste’ until I read from you that it’s possible. @sussan_scoolinaryteam , have you tried making this preparation with other vegetables? I can’t wait to see the results by experimenting with different veggies.💚🌿

          Yes, when I first saw the recipe, I was shocked, I’d never considered the possibility of a lettuce sauce before. It is very creative!
