How long does each product last before and after it is ready, and how to maintain it after it is ready?

      Likely fruit class and croissant

          Hi @chellysud
A croissant in optimal conditions can last up to 1 day which does not mean that it will spoil the next day, you can refrigerate it and then regenerate it, but it could lose a little of that characteristic crunchiness of the croissant

How long does frozen food last before baking? and in relation to the likely fruits, what is the yield of the recipe, what is the conservation method after it is ready?

            Hi Marychelly

Classic croissants without filling can last approximately up to 1 month when frozen.

I do not advise storing or freezing croissants with fruits for a long time. You could store them frozen for 2 to 3 days at most.

Filled croissants can be stored for 5 to 7 days.

All these approximate times could change if the products are not stored following certain hygiene and safety standards (cross contamination).

The yield of the dough depends on the size used to make each croissant. Approximately, they yield between 16 to 18 croissants.

The way to store the ready croissants will be in an airtight container; they cannot be stored for a long time (up to 24 hours) since after a while they lose that characteristic crunch that the bread has.
