Discovering new ways to prepare food is always an exciting adventure. One of the most fascinating techniques we’ve come across is curing egg yolks. By coating the yolk in a mixture of 40% salt and 60% sugar and allowing it to cure, we’re able to create a wonderfully unique flavor. After the curing process, we dehydrate the yolk at a low temperature 45c-55c, and voila – we have a delicious and versatile ingredient that can be used in a multitude of dishes. So next time you’re in the kitchen, don’t be afraid to experiment and try something new!
