Here is what I made, I used the leftover beef from the last challenge, and served it with demiglace sauce, and celery root/Celeriac pure. I also used some of the decorations and creams that were left from the other challenge so that the creams dont go to waste. Also I cheated a little bit with the demiglace, using a store bought bone stock, but, I still had to go through the process.

@Sol Damiani Thank you very much, It has always been important to me, to never let anything go to waste if it’s usable. Another important thing is, that working in a busy kitchen, it kills your motivation to create new dishes, try new techniques, find new ways to present the food. Everything becomes so dull. Little by little, I am losing motivation to learn new stuff and experiment with different cuisine’s. Back on culinary school and my first year as a chef I was more inspired to learn world cuisines and new techniques. I am trying, and I will try harder to get my motivation back. I won’t back down from this career that I have chosen, and this dream of mine since a kid.
