less strength but good elasticity, Which makes Hand Rolling much easier

Impressive work! The crumb looks beautiful and well developed, with a perfect airy honeycomb structure. It’s clear that using Caputo Nuvola flour provided excellent elasticity, making hand laminating easier.
Truly an admirable croissant!

So great to know! With the huge Gladiator II premiere coming up, the croissant on the third pic has the definition and presence of a true gladiator. I think it might even have a personality. 😂
