          The glaze has such a beautiful shine—it makes every bite look like pure indulgence. And those little pieces on top, are they cacao nibs? If so, they must add a lovely crunch and a touch of bitterness to balance the sweetness of the chocolate perfectly.

            @Sussan Estela Olaya Yes, these are cacao nibs, I totally like the balance of the slight bitterness and the sweetness of these chocolate cute eclairs. A great discovery for me is the chocolate cream that was used for the filling. I’ll absolutely use it for other preparations as well.

                @Sussan Estela Olaya Certainly I’ll apply for the filling of bigné al cioccolato, that are so loved here in Italy, or I could make una doppia farcitura and combine this cream with nocciolata, or I could use it as one of the layers nelle crostate moderne. I liked that this cream is without sugar and all the sweatness is provided by the chocolate. It is silky and very stable. Thanks for this amazing course, yet I’m about to try other fillings that were proposed by Fran Segura
