If you’re making the dough with only 500 grams of flour, that means you’re dividing all the ingredients by 3. In the end, you’ll get approximately 888 grams of dough.
The full recipe calls for 1,350 grams of dough and 500 grams of butter. With the amount of dough you’ll have, you can make half the recipe. In this case, you’ll need 250 grams of butter for laminating.
For half the recipe, the butter should measure 21×21 cm, and the dough should be a rectangle of 35.5×21 cm.
