Chicken Involtini with vegetables.
This dish was a reason to practice some plate presenting ideas.
Tried to make some herb oil, also learned in scoolinary courses, and culinary school a couple years ago.
The dish also contains some beetroot mayo with only egg whites, and red pepper pure.
The plating courses and photography one, are inspiring me to plate better.

There are still a few things to improve, looking back at it. As an example, would’ve been better to use only 3 chicken rolls, and the dot placement to had been thought more.

Now that you mention it, I totally agree with the number of chicken rolls. Nevertheless, I think the colors you used are really something special. What would you suggest @abigailscoolinary-com @emilyscoolinarycom @abigailscoolinary-com @sumantsharma1993gmail-com to improve our colleague’s plating?

@Sol Damiani Here at my country, most of the restaurants I had the chance to work are very poor in plate presentation. Also the culinary school I have been at, was mostly focused on teaching us the basic knowledge, even though it was a good school and with high standards. I did get some general ideas how to present food from the school, but lack of practice set me back. There is still a long way to go, but I have been improving a bit.
