    Hi, hello, a question about gelatin, if it is listed in the recipe in the Bashur chef’s course. 2.5 silver gelatin. And I only have fish gelatin in powder. How much do I replace according to what ratio. thanks

    1. Silver leaf gelatin has a bloom strength of 160, while fish gelatin powder typically has a lower bloom (usually between 120 and 150). This affects its gelling power, so you’ll need to adjust the quantity slightly.

    2. Equivalent Amount: If your fish gelatin powder has a bloom strength close to 150, you can use the same amount in grams, which is 2.5 g of gelatin powder. However, if it’s a bit weaker, use around 2.8 g to achieve a similar gelling effect.

    3. Hydration: To use the powdered gelatin, first hydrate it with 5 times its weight in cold water before adding it to the recipe.
