    Hello!.

Welcome to the Scoolinary community! Thank you for your question.

If you can’t find 35% cream, you can make an alternative by using lower-fat cream and adding a bit of butter to increase the fat content and reach 35%.

Here’s how you can do it:

    Alternative to reach 35%:

-30% cream: If you find cream with a lower fat percentage (like 30%), you can combine it with some butter to boost the fat content.

    Formula:

    100 g of 30% cream

    5-6 g of butter (about 1 teaspoon)

    -Procedure:

Melt the butter and mix it well with the cream.

This should give you a mixture with around 35% fat, which is suitable for making ice cream.

If you have 25% cream, you can use the same proportion of butter to reach 35%.

This is a practical way to adjust the fat content of the cream without losing the desired consistency for your ice cream base.

I hope this helps! If you have any other questions or need more details, feel free to ask.

    Best regards.

        Hello.

Margarine is not a good option to replace butter or to increase the fat content in your ice cream mix. This is because margarine has a higher water content and a different fat structure, which could negatively affect the texture, creaminess, and stability of the ice cream.

I recommend looking for heavy cream or whipping cream with a higher fat percentage (at least 30-35%) online, where you can often find a wider variety of products than at local supermarkets. You could also check specialty baking stores or shops that cater to professional chefs. This ingredient is essential for achieving creamy, high-quality ice cream. It’s worth the effort to find it!

        Greetings.
