is there a specific height I should use for the rings? He doesn’t mention it and before I buy them I just wanted to confirm the height.

Yes…I’m trying to confirm the width (or diameter) of the ring. The rol is cut to 3cm, but I’m assuming he is leaving room for expansion.

After rolling out the dough to a size of 60 cm x 40 cm, the dough rolls should be cut to a width or thickness of 3.5 centimeters.
