    According to the recipe and video, the pastry rings used to make Anthonio Bachour’s hazelnut pain aux raisin have the following dimensions:

    • Round rings: 14 cm in diameter

    is there a specific height I should use for the rings? He doesn’t mention it and before I buy them I just wanted to confirm the height.

    The chef mentions in lesson 21 to cut each roll to a width of 3.5 centimeters. Therefore, the height of the baking ring should be approximately 5 centimeters.

    Yes…I’m trying to confirm the width (or diameter) of the ring. The rol is cut to 3cm, but I’m assuming he is leaving room for expansion.

      Hi Michelle.

      As the chef indicates in the course, the rings measure 14 centimeters in diameter. After rolling out the dough to a size of 60 cm x 40 cm, the dough rolls should be cut to a width or thickness of 3.5 centimeters. From watching the video, I can observe that the ring he uses appears to have a height of approximately 5 centimeters.
