How did you balance the acidity of the tomato?

Thank you. I put together this vegetarian tartare with heirloom tomatoes, Thai basil, and chives. To balance the acidity of the tomatoes, I added sundried tomatoes, red currants, and beetroot. I used olive oil, shallots, and raspberry vinegar for the vinaigrette.

Thank you, Sol! My response to Massimo above may answer some of your questions. And, yes, today, I had some time, for once! Regarding the ingredients that might have triggered my interest, I have shared many photos of my dishes using all kinds of ingredients on Instagram, so it was easy to pick one. I have one or two more that I might share using tomatoes for this competition. I chose the tomato tartare photo because it’s original.
