lunch for two – Salmon Ponzu Poke with Irish Wild Salmon.
Charred some shallots on the BBQ then pickled them with rice wine vinegar, also made some pickled cucumber from the course.
Made some Sushi Rice & Ponzu Sauce (from the course).
Edamame beans, carrot spirals, radishes, green onion. Sesame seeds and some extra Katsuobushi on the Salmon Ponzu.
Made a simple Lemon mayonnaise.
Really delicious meal.
Added a few of my fishing lures into the picture as a nod to the fishermen and the origins of the dish.
