I made this for the individual desserts course with Hans Ovando. The hint of balsamic and rosemary were awesome. The flowers are so much subtler and less piney than the needles. This one’s a keeper but only if I can get the rosemary flowers😁 An ode to the end of the strawberry season. Sablé•strawberry/lemon olive oil cake•strawberry jam•strawberry mousse•chocolate ring deco•lightly macerated strawberries with a touch of balsamic on chantilly cream•strawberry powder•rosemary flowers. 🍓😋

@sussan_scoolinaryteam Thank you kindly! This ended up being so delicious, I was actually a little surprised when I took the first bite. I was so focused on all the components and techniques, I kind of forgot all this stuff also tastes amazing!! 🙂 I’m definitely trying to do better with my photos. I get a new phone in a couple of weeks so I’m going to have a better camera and I’m going to really try and learn all it can do.
