Besides a lot of tasting, I generally don’t eat much at work, but we’re working on a new potato gratin pastry and I had a moment of weakness. Crushed one of these bad boys in about one minute. 😋

@undefined Classic puff pastry that we proof with a weighted tart mold in the center. We made a potato gratin with cream and a gruyere and cut knobs out after it cooled and baked the pastries with them in it. The next version has just cream in the baked potatoes but we’re going to cover them with the cheese before we bake them. Unfortunately I won’t be working for that batch😭
