These small savory Linzer cookies were my masterpieces last weekend.
I decorated them with a variety of seeds: black and white sesame, poppy seeds, Parmesan cheese, and cayenne pepper.
They looked super cute before baking.
And even cuter after baking… but the cayenne pepper got dark. 🙁
It didn’t burn, but it lost its beautiful, vibrant red color. Do you have any ideas on how to prevent the color change? Can a bit of oil help?

Your cookies turned out beautifully, and the decoration with different seeds is original and looks very well done. 😍
Regarding the cayenne pepper, it’s true that vibrant colors can sometimes fade during baking. Perhaps trying a light brush of oil before baking, as you suggested, could help preserve the color, or adding it right after baking might be another option. Have you considered baking at a slightly lower temperature to prevent the color from oxidizing?
Thank you for sharing with the community. ✨

I hope Sussan’s response and her tips help you in your next attempt with cayenne pepper!

🎶 “Friday I’m in Love”? Can we change it to “Tuesday I’m in Love”? Because these Linzer cookies stole my heart right on the spot! 💘
The seed toppings are a stroke of genius—textural contrast at its finest. About the cayenne: could we consider adding the cayenne *after* baking, like a dusting of vibrant red right before serving? @sussan_scoolinaryteam what do you think? Or maybe mixing it with a touch of paprika to keep that fiery color alive?

@soldamiani I think it would be a good idea to add some before baking and maybe some at the end because I’m not sure if the cayenne peppers will stick after baking. What I could do, as you suggest, is add a bit of paprika to enhance the color.
