These days, I felt a deep nostalgia for Italy and decided to prepare something Italian.
I made these tiny zucchini focaccia where zucchini are present twice:
1️⃣ in the dough and
2️⃣ as crispy chips.
The chips are seasoned with salt, lemon, fresh basil, and olive oil. They are nicely placed on a soft ricotta layer. Hmmmmm….

I wish you´ve seen my face when I read “ricotta layer” @orsolya-csernak 😂 These are so beautiful! Perfect for a canapé, right? I NEED to know which drink you chose to pair them. I would pick a nice gin tonic.🍸Zucchinis are usually pretty wet. How did you manage to make that focaccia and prevent them from watering down the dough?

Well, we just had a glass of Chardonnay. ☺ For the dough, I freshly grated the zucchini and immediately mixed them into the flour. They had no chance to water the dough. 🙂 (250 g of flour 00 with 40 g of zucchini and 100 g of water) 🥂

Zucchini and ricotta match perfectly. These look amazing. A few years ago I wouldn’t prefer zucchini at all. Now they are one of my favorite vegetables.

@Xhefri Korita Absolutely, I know what you mean. I think that there are some vegetables – in my case: zucchini, eggplant and artichokes. They came in my life quite late and now, I can’t immagine my life without them. 🙂🙂
