Where can we get gruau rouge flour or equivalent for the croissant recipe?

I followed the videos step by step and the butter melted out of the croissants in the oven within the first minute of baking. The pan was a sea of butter. I used 12.2% protein flour and high-fat butter. What can I do next time to correct this?
