Your presented eggplant fattah demonstrates a great use of traditional Middle Eastern ingredients. The combination of baked eggplant, toasted bread, and minced meat with the yogurt and tahini sauce, along with hints of sumac, pomegranate molasses, and roasted almonds, creates a rich blend of flavors and textures that is very appetizing. It’s clear there’s a strong understanding of balancing acidic, creamy, and crunchy elements.
As a suggestion, arranging the ingredients in more defined layers could give the dish a more organized and appealing look.
Adding a decorative touch, like fresh pomegranate seeds or a few sprigs of cilantro or parsley, could enhance the colors and make it even more visually attractive.
▪️Balance of sauces:
If the dish feels too dense, slightly reducing the amount of sauce could help prevent the bread from becoming overly soggy, maintaining its crunch for longer.
▪️Toasting technique:
To intensify the flavor, you could roast the almonds with a bit of sumac or paprika to enhance their aromatic profile.
With these small adjustments, the dish will not only taste amazing but also become a true visual masterpiece. Excellent work so far!1-

@Sussan ScoolinaryTeam thanks alot for your comment and advice 😍 totally agree I forgot about parsley and didn’t have pomegranate seeds at the time 😞 the sauce is not on the toasted bread for that reason not to become so soggy so it Maintained crunchy for a quite time will apply all the tips and get the new result ❤️
