Pizza Asturiana
Paprika dough made with the poolish method.
Home made pizza sauce, a little parmesano then mozzarella. Toppings are thinly sliced Asturian Chorizo, Morcilla and Panceta Curada and a few fabes beans cooked in iberico fat. Could also have named it a Fabada Pizza.

Ground some rump cap, chuck and a little 60 day dry aged strip which gives the burger a real extra beefy flavor. Coarsely ground once.
Loosely formed before smoking indirect with mulberry wood.
Brioche bun toasted, mamba sauce, avocado, burger with melted cheddar cheese, Pico de gallo.

Pulpo with a vinaigrette and yellow Romesco Sauce.
Who would have guessed it was so difficult to get a black plate. Only plate I could find was a small rectangular slate plate.

Pollo a la Brasa with Aji Verde Sauce
Peruvian BBQ Chicken Sharing Platter – fine dining this is not but getting dirty with this full Rotisserie chicken served with Peruvian green sauce is extra tasty.
Chicken marinated overnight in a Aji Amarillo marinade.

It is SO interesting you marinated the chicken overnight in Aji Amarillo—I’m sure it adds such depth to the flavor.😋🌶 This plating and preparation look incredible! The roasted Corn Ribs with Chilli and Lime BBQ rub sound like the perfect spicy, tangy side. Serving everything on an Inca Gold Plate really adds to the presentation.

Hünkar BeÄŸendi – The Sultan’s Delight!
A very old Turkish/Ottoman dish which I cooked on the BBQ.
Roasted Aubergine and cheese made for a vibrant and silky puree.
Lamb cooked slowly in a sauce (garlic, onions, peppers, tomatoes, chilli, herbs). Used Tagine pot.

Those who eat well live happily!
Polpette all’essenza di limone do sorrento served with plenty of Lemon Sauce.
Lemon scented Meatballs smoked with Lemon Wood in the BBQ.
Ground some dry aged beef with higher fat content as I was smoking them instead of frying.

American Style BBQ
Pecan wood smoked chickens with a Jalepinõs and Lime rub.
Cooked at a relatively higher temp of 350f to give smoked chicken with crispy skin.
Summer salad – Manchego Cheese, tomato, onion, rocket and just a little mayo dressing.

Introduction to Plating completed – really enjoyed this course. Eva a good tutor.
Still really bad at plating but at least I am better than I was.
Here is a Cherry Smoked Belly pork BBQ from today. Smoked, then cooked in sauce and then stir fried.
Served with cauliflower rice. Home grown chillies and cherry blossom from my cherry tree for added garnish.
