It’s been almost a year since I joined Scoolinary, and today I’m feeling a bit nostalgic. I remember the very first course I took was a risotto course. I don’t think I ever completed it, as it’s hard to find the right fish where I live, so I couldn’t get all the ingredients. Still, that course taught me so much about risotto, and now it’s something I make regularly.
I especially love it when my risotto is colourful. Sometimes I “dye” it with beetroot or purple carrots to give it a vibrant, unique look. To celebrate my risotto nostalgia, here’s a little collection of my best risotto creations. 🙂

I find it admirable that, despite the difficulty of finding some ingredients, you continue to explore and perfect your technique.
