      Hi everyone, tadaaaa! Here is my BIGA. Yesterday, I rewatched Luigi’s Pizza course and just prepared my BIGA.

      According to Luigi, it shouldn’t be kneaded completely. Following his instructions, my Biga is now relaxing at 18-20°C for 4 hours and will then spend 20 hours in the fridge.

      Tomorrow, if it grows as expected, we’ll bake our first homemade pizza. 🍕🍕🤩🤩 Exciting times!

      Quick question for those with BIGA experience: Do you think it’s hydrated enough? It seems a bit dry to me.
