Hi guys, as promised I’m here with a Hungarian classic: Gundel Palacsinta
This is the moment to share a Hungarian specialty. Last weekend, I prepared different kinds of pancakes.
I decided to share Gundel palacsinta first. (Then, the others are coming one by one 🙂) Palacsinta is a Hungarian classic and a favorite among children and adults.
Gundel palacsinta is perhaps the most prestigious among the thousands of variants we know and love.
What is Gundel palacsinta? It’s a roll of thin pancake filled with walnut cream and topped with chocolate sauce.
This time, I followed the original recipe and traditional plating.
For the palacsinta:
– 200 g sifted flour
– 250 ml liquid (70% milk 30% sparkling water)
– 5 g vanilla sugar
– 1 egg
– Lemon zest
For the walnut cream:
– 200 g grated walnuts
– 50 ml cream
– Cinnamon, sugar
Melted chocolate and powdered sugar for plating.
To make the palacsinta batter, mix the egg with milk and water, then add sugar, lemon zest, and flour. The mixture should be thick but liquid. This amount is enough for 10 pancakes. Fry the pancakes in a pan using some oil to make frying easier.
For the walnut cream, heat the cream with sugar and cinnamon, then add the walnuts. Stir for 1 minute, then let it cool down.
Spread 1 tablespoon of walnut cream on each pancake and roll them nicely. Heat butter in a pan and fry the pancake rolls to make them a bit crispy. Finally, cover them with melted chocolate on one side and powdered sugar on the other side.
In the original recipe, raisins are added to walnuts, but since my family doesn’t like them, I skipped it. 🙂🙂

OK 😍 This is gorgeous @orsolya-csernak It’s great to know about classics and local flavors like this. I gotta say I love the presentation of those Palacsinta 🙌 Here in Argentina we have something very similar (only we add dulce de leche and vanilla cream, not wallnut, which I guess turns it into a heaven on earth). We call them ‘panqueques con dulce de leche,’ and they’re a classic dessert in our restaurants called ‘Bodegones’—ancient places decorated with a lot of dark wood where they serve ‘minutas’—dishes prepared in a few minutes.
