Slow-cooked beef, tender and rich in flavor after hours of gentle roasting, is served alongside a velvety sweet potato purée, whose natural sweetness perfectly complements the depth of the meat. Roasted mushrooms bring earthy, caramelized notes, enhancing the overall balance of textures and flavors. The dish is finished with a deglazed sauce made from the beef’s natural juices, infused with whole peppercorns, lemon, and creamy yogurt, creating a perfect harmony of richness, spice, and refreshing acidity.

That dish is a true masterclass in balance! 😊The slow-cooked beef looks like it melts on the fork, and pairing it with a silky sweet potato purée is a stroke of genius—sweetness against deep, umami richness. The yogurt-infused sauce adds a layer of intrigue with its creamy acidity (would give my kingdom away just to try it 🤩). How did you handle the peppercorn infusion? Did you let them bloom in the sauce or strain them out for a smoother finish?

@Sol Damiani Thank you for such a wonderful description! The slow-cooked beef is truly the heart of the dish—it falls apart beautifully, while the sweet potato purée provides the perfect contrasting note. As for the pepper infusion, I first lightly toasted them to release their aroma, then added them to the sauce to slowly infuse depth of flavor. I strained some for a silky texture but left a few to add a subtle crunch. Honestly this sauce and cream was an improvisation in an attempt not to waste anything, especially the taste. ☺️

This looks incredibly comforting! The combination of juicy meat, velvety purée, and the depth of roasted mushrooms sounds like a dish that nourishes not just the body, but the soul as well. I’ve never tried ox meat—how would you describe it compared to traditional beef?

Thanks for sharing your process! ✨

@Sussan Estela Olaya Thank you, Sussan! I love how you put it—food should always nourish both the body and the soul.

Ox meat has a deeper, more intense flavor than traditional beef, with a slightly richer texture. It benefits from slow cooking, which brings out its tenderness and complexity. If you enjoy beef but crave something with more depth, ox meat is definitely worth trying!
