      Melting Heart Potatoes

      In the scorching heat of the oven, the potatoes slowly surrendered to the warmth. Their edges took on a delicate crispness, while their insides transformed into a soft, golden mass, ready to embrace what was coming. Steam rose from them as they emerged from the oven, and a sharp knife carved through their centers with precise strokes, releasing the aroma of roasted potatoes that filled the kitchen.

      Meanwhile, on the stovetop, hot oil welcomed finely chopped onions, which let out a gentle sizzle upon first contact. Their sweetness began to unfold as carrots and mushrooms joined in, soaking up every trace of heat. Ground meat tumbled into the pan, crumbling under the weight of the wooden spoon, while red wine cascaded down the edges, bringing notes of smoke and depth. Thick tomato concentrate bound everything together into a rich, luscious mixture—dense, like a story unraveling layer by layer.

      As the Bolognese sauce simmered gently, skilled hands mixed the hollowed-out potatoes with butter and cream, adding a pinch of salt, pepper, and nutmeg. The creamy purée returned to its small roasted nests, as if it had never left home.

      Then came the first layer of cheese, like a delicate dusting of snow before the spring thaw. Then the meat—rich, dark, and fragrant—followed by another layer of cheese, now sealing the dish like the final signature on a culinary masterpiece.

      As the stuffed potatoes returned to the oven, the warm light inside illuminated the last act—the cheese melting, slowly enveloping everything in a golden, irresistible crust. The air filled with warmth, richness, and a sense of something beyond a mere meal.

      Every bite was a story in itself—a story of warmth, comfort, and something that transcended mere hunger, whispering to the tongue memories of home and safety, of a time when the scents from the kitchen meant love, translated into food.

            @lanamihajlovic I got the chance to meet virtually your sis, @beatriztorijagmail-com and found out she is a journalist. We can easily tell her writting skills. What about yours? What’s your background? I studied Cinematography, acting, clowning and used to be a sushiwoman 😂 Then, went all the way through to social media and now I’m here, doing what I love the mos: real Community Managment.

              @Sol Damiani It’s great to hear about your journey. As for me, I run two companies with my husband—one focused on marketing and graphic design, and the other on web design and digital media. We also have two online magazines, one dedicated to travel and the other to health. Aside from that, cooking is one of my biggest passions (as you might already know 😁), and I also love to draw and write.

              Writing is actually part of my work too. I’m involved in some humanitarian work as well.

              And here’s the kicker: my superpower 😎 is that I don’t sleep much, which means I have time for everything, including coming up with new ways to pretend I’m a normal person. 😂 I’d love to meet up and chat sometime—it sounds like we could share a lot of interesting stories! 💞

              @Sussan Estela Olaya Thank you so much for the kind words! I’m so glad you felt the layers and care in the recipe—it’s really a labor of love. As for the cheese, I’ve been experimenting with the right balance of heat and timing to get that perfect melt without overflowing too much.

              As for your questions, I have to admit, I’m still new to the academy, so I can’t say there’s one recipe I cook regularly just yet. However, the Spanish croquettes really blew me away, and I’m sure they’ll become a staple on my menu. I’m excited to try out new variations of them in the future.

              I’ve also learned so much from the courses from Ignacio Barrios. His insights have really helped me refine some of my cooking techniques, and I’m looking forward to mastering more along the way!

                @Beatriz Torija Especially on cold evenings ☺️ In general, baked potatoes from the oven are something that connects me to my childhood. In winter, we often prepare halved and salted potatoes in the skin, baked in the oven, served with bacon, salted onions (we call them crying onions), oil, vinegar and sour cream. 🤪

                  @lanamihajlovic qué bonito cuando los platos hacen volar la memoria… a mí las patatas asadas me recuerdan a las fiestas… cuando montan atracciones como la noria, coches ee choque… y también hay mercadillos y puestos de comida. El que mas me gustaba era un pequeño puesto ambulante que vendía patatas asadas rellenas 🥰🥰🥰
