      Last weekend, I felt a bit lazy, so I preferred to relax rather than do anything else. In the evening, I decided to cook some corn and prepare a fresh gazpacho with minimal effort in the kitchen. Then, my daughter asked if we could make something sweet. That’s when I came up with my 7-minute Swiss roll!

      For the sponge cake, I used 3 eggs, 60g of sugar, and 60g of flour.

      After 7 minutes at 200 deg. in the oven, I rolled it up with homemade apricot jam.

      It was a great success with my family! It’s truly amazing how many different cakes, sweets, and dishes we can create using just these three basic ingredients.

          Ooh, this unlocked a childhood memory for me. We always used to get the most elegant mini Swiss rolls from Woolworths when I was young. My favourite ones were filled with caramel and whipped cream. They looked very much like yours. Lovely dessert!
