Ever since I discovered poke during the Poke Challenge, there hasn’t been a single week without poke bowls!
These were our dinner yesterday—every bite was a new adventure!

I love how you combined so many techniques, from fermentations to escabeche,it adds an incredible depth of flavor.
Plating is everything, and that dark bowl really makes the colors pop. 😍 With the marinated salmon, chili-mango sauce, and wasabi mayo, I bet every bite tells its own story.
With so many textures and flavors at play, what was the most unexpected ingredient that surprised you in this version?
